Ingredients
Salad Dressing:
1/2 teaspoon salt (add more to taste)
1/2 teaspoon fresh ground pepper
3 teaspoons dried oregano (or basil…or both)
2 or 3 garlic cloves, minced
juice of ½ lemon

¼ cup red wine vinegar
1/2 cup olive oil
1/2 cup olive oil
(Sometimes I whisk in Dijon
mustard…sometimes Honey if I want something a little sweet. Get creative!)
Greek Salad:
1-2 heads of romaine lettuce
1/4 cup pepperocini, thinly sliced
1 cup cherry tomatoes, halved
a few thin slices of red onion
1/2 cup cucumber, peeled and thinly sliced
1/2 cup Kalamata olives, pitted
( if you are doing cheese) 1/2 cup crumbled feta cheese
1-2 heads of romaine lettuce
1/4 cup pepperocini, thinly sliced
1 cup cherry tomatoes, halved
a few thin slices of red onion
1/2 cup cucumber, peeled and thinly sliced
1/2 cup Kalamata olives, pitted
( if you are doing cheese) 1/2 cup crumbled feta cheese
Add in chicken or steak if you want to make this a main dish
Make this salad your own…add different things. I added
mushrooms tonight.

I love putting mine in a mason jar (I don’t know why…I just like the look of it.) Cover your bowl and refrigerate for a minimum of 2 hours to allow the flavors to blend. Toss over salad. Enjoy!

MUCH MUCH MUCH BETTER DAY TODAY!!!!! I am feeling like a new person. I made it through I think!!! YAY Had a great workout with the 4:30 crowd and even did burpees and thrusters!! Shoulder is feeling good so far. Happy about that. Food has been good today.

ReplyDeleteOops I accidentally took someone else's sweatshirt when I left the box this morning, but that's what he get's for telling Andy I said those pistol's were easy, when I DIDN'T, but somehow I ended up losing that argument and had to do them on a lower box, GRRR. Had a great day, lot's of good energy after class this morning, New recipe's today, Crab cake's with paleo mayonnaise, and tiffany's cocco cookie's, the recipe said dark chocolate chips are optional and I used them, I Think I need to take a cheat for the cookie's, I ate way to many and I could feel the sugar instantly, can't believe how fast it hit me. Paleo Mayo turned out pretty good, and the crab cake's were ok, think they just need a little bit more flavor, will post a recipe after I figure it out and try it again. Four workout's down and counting for the "Paleo my Way". Thank's for the recipe Melissa, sound's really good, can't wait to try it. I'll be running in the 5k Rabbit Run tomorrow morning out at the courthouse, probably not to late to sign up, check it out at Racetimingunlimited.com, hope to see some of my CrossFit Family there, you are all wonderful..

I had a good day today. No sanity items again, and today I ate NO fruit... however, my headache returned, ugh! This weekend will be tough for me, we are leaving in the morning to spend Easter with family. I plan on one cheat meal, wish me luck!

(thanks Andy!) no cheats this week but I'm really thinking about making a grilled veggie pizza tomorrow with pesto and goat cheese....great, now I will go to sleep thinking about this dang pizza! yeap it's on now! definately doing the pizza tomorrow but I will prepare it at home so I can control the cheat a little better. ReplyDeleteThat salad dressing looks yummy Melissa--I'll be trying it this weekend! Did pretty good today--had my cheat this afternoon-nephew's birthday party. I mostly had chips and salsa. I had a couple bites of cake--wasn't that yummy--wasn't worth eating any more. The rest of the day went well. Got my WOD on this morning--love those pistols! That only makes 2 real WODs for this week, so I'll be there in the morning. Can't wait to see what Saturday brings!

Hey Maria here. I cheated. I had fries and gyro meat on rice with chocolate mouse. Worked out. I was coached by the amazingly handsome and intelligent kent Ingalls. Did I mention handsome? Did you guys know that kent wrestled a bear once and won my heart? He also lifted a car over his head to save a kitten. My hero
ReplyDeleteAte well today plus my sanity cheese. No wod but got some exercise chasing my 17 month old niece around the playground today and took my dog for a nice walk too. I need to drink more water though, but that's a constant battle that I must conquer.
ReplyDeleteToday was not bad I am still on track with my diet. I am so excited Sunday is almost here so I can gorge myself on sushi and have a glass of milk mmm mmmm. I can't wait :-) The wod was killer but for some reason I love the chippers. Headaches are few and far between but my sleep schedule is still jacked up
ReplyDeleteToday was good. Followed my diet well. Once again temptation struck. One of my co-workers came in with a delicious looking easter cake for the office! ARGHHHH! So I had to see people walking by eating it all day. I just kept repeating to myself W.W.A.A.D (What Would Andrea Ager Do) HA!

ReplyDeleteStayed on track except for a dark chocolate covered cashew Casey literally shoved in my mouth. My own fault tho for not spitting it out. At least i said no to sponge cake. Got in a good core work out at my dad's house in ny. Cheat meal saved for Saturday.

ReplyDeleteDan and I ate good food. I got to the WOD. I just wish that my boss would stop bringing in food into the lab. He spends $60 a week on snack food for 6 engineers. And when I am in the lab alone I know that the box of Cheez-its across the room is staring me down.
