Kent's Roast Chicken


Kent's Basic Roast chicken

Cooking Time = approximately 1-1.25 hours

Serves 4-6

One 2 pound free range, organic, happy chicken

1 lemon, zested and remaining lemon cut in half
2 slices of uncured, nitrate-free bacon, chopped
3-4 cloves garlic, peeled and chopped
One good handful mixed fresh herbs, ( parsley, sage, rosemary, thyme) mix and match all or just a couple
Salt and pepper
1/2 cup grass-fed butter
2 pounds carrots, peeled and cut into large chunks
2 large sweet onions, peeled and cut into wedges
( optional) one large celeriac, peeled
Cooking Instructions
Preheat oven and roasting pan to 425 degrees.  Wash your happy chicken inside and out and thoroughly dry.  Season whole chicken inside and out with salt and pepper.  Peel back the breast skin with your hands and stuff with half of the butter, herbs, and lemon zest, and all of the chopped bacon.  Take the remaining herbs, butter and zest and rub the outside of the chicken.  Stuff the cavity with the lemon and tie the legs together (truss). Put onto the pan in the oven to cook for 15-20 minutes while gathering the remaining ingredients.
Get the vegetables into the pan, toss them around in the melted goodness, and position the chicken on top of the vegetables so they can soak up the delicious drippings.  Cook the chicken for another 45-60 minutes until skin is well browned and thermometer registers 160ish degrees. Pull out to rest for 10 to 15 minutes, remove the meat and vegetables and put the pan on the stove.  If you'd like a gravy, hit the hot pan with a glass of dry white wine, and a little stock. Scrape up all the brown bits with a sturdy spatula and let reduce until delicious. Pour on top of vegetables and meat and enjoy.

    1. The roasted chicken was delicious and a hit with the entire family. We enjoyed some grilled asparagus as well and are getting ready for a snack of oranges, apples, walnuts, drizzled with honey and cinnamon. No sanity items required today :-). Thanks for the awesome WOD today. My butt is killing me LOL!

    2. This sounds so wonderful. Will hope to try this tomorrow night. I just got back into town late today and Paul will be home tomorrow. At a quilt retreat since Friday moring with all women and I won't tell you how much bad stuff was there to eat -- CHOCOLATE ruled. Uugghhh, I am starting from square one with Paleo, though I am still down 25 lbs since 11/1/11. Tricia Taylor

  3. Day 2 of "Paleo My Way" is coming to an end! I had a great workout today at Forward. Thank you Kent once again for the amazing programming job you are doing. Getting ready to have the above recipe for dinner. House smells amazing. Really happy to be back on track with this program. Oh and guess what? No sanity items needed today. Yay!!!!

  5. I followed the rules today AND showed up for the WOD. I haven't had a "sanity item" YET. We'll see how the evening goes. I'll probably be dreaming of walking lunges tonight. Thanks Kent.

  7. day 2 for me today, so far so good, today I only used my biggest vice which is rice! I am trying to mainly stick to the one as a general rule, except when I go to chipotle and have both rice and sour cream.....Went to the crazy 6:30 WOD, lots of people and lots of fun, it felt great! can't wait to keep going and see the results!

  8. Long day today. It's interesting how when I'm tired it becomes harder to stick to the plan. Thankfully my wifey is taking care of me today.
    Lots of grilled meat, avocados, vegetables & some wine.
    So far so good. Great crowd at the gym in the evening.

  9. Day 2. Did great with the food.Went to the store and stocked up. Wegmans now carries coconut in the larger chip size.
    I need to drink more water. I did not WOD today. Looking forward to tomorrow!

  10. Great day at Forward today (honestly when is it not?). The challenge has no impact on me since its become a way of life for me. Heather is doing AWESOME so far. I can already see the lack of sugary sweet goodness starting to mess with people (I wont name names EC). Had a great time with the 530 crowd tonight and an awesome WOD thanks to Kent. Hit some strength stuff up pre-WOD and I can definitely see improvements in my lifts (not based on this challenge but the work I've been putting in). Can't wait to see the dramatic changes this challenge brings to my Forward family. Stay strong folks, there is a pot of gold at the end of the rainbow.

  11. Ugh. Day 2....what can I say...the only thing bright about this morning was Tiffany's shirt. Walking lunges in the cold wind. I will be feeling it tomorrow. Tough day keeping track on the plan. Tomorrow will be better. Have a great night all.

  12. Day 2 and it was a long and hungry one... Stuck to it but am just still getting used to not eating what I want. Didn't complete the word because I was buying a new car :) looking forward to tomorrow though!

  13. Day 2 went well, I had to use a cheat meal today (hosting a book club). However, after my meal I went right back to the program and feel good about it. I think that tomorrow is going to be great! Already have my meals and snacks planned so BRING IT! Missed the wod today and am looking forward to tomorrow morning.

  14. Day 2 was a tough one for me. My body is going through sugar detox and i had 0 energy :-( But i am not worried the first week is always the worst for me but thanks to the amazing Avacado i will survive. Wod was tough but fun i am really starting to love these insane Wod's.

  16. Great start to the day, tough evening. Sugar cravings are getting me. Forgot how hard going off sugar was--bleh! It's okay, tomorrow is another day and it'll get better! Loved those walking lunges today!! Sure am feeling it now!

  19. Had a great day! Ate a little more fruit then normal, but I did do the WOD so it's okay :) My only sanity item was cream in my coffee. Running with a friend tomorrow so I will see you all on Wednesday! Carrie

  20. Better late than never I guess. I actually started on the first, but didn't blog because I cheated on day one with a handful of M&M's....so sad. But I figure that I would continue even though my first day didn't work out so well because I would like to improve my diet long term as well as look and feel better. So I am giving up all bread, grains and yes....sigh.....those M&M's too. I am going to keep the cream in my coffee(I can't get through a night shift without it) and a piece of dark chocolate here and there. Todays WOD was great, already feeling it. I did really well with my diet today, just the cream in my coffee. Donna

  22. This no sugar think is not going too badly. Certainly not fun, but not as horrible as I thought that it would be. I have been eating a LOT of fat to make up for the lack of sweetness (almonds, almond butter, coconut, coconut butter/manna, etc.) but I haven't gained any weight so far. After reading everyone's blog on the first day, I thought that I would make it a goal to eat fish once a week, too. (I tried that as a New Year's resolution, but it fizzled very quickly, as I really do not like seafood.) I had the pecan crusted trout from the Paleo Comfort Food book last night, and it was actually pretty good. Did the wod this morning and am anticipating being very sore!

  23. Day 2! Great workout today. Even though it sucked horribly the energy in the gym tonight was awesome....and loud! After doing those lunges, I have never been so happy to get to a run in my life. So excited about the challenge. I need it. My life has been just a tad bit busy lately and my diet has definitely reflected that. Time to refocus and DO WORK!!!!!

  24. day 2, Amanda and Dan made it. We got some Chipotle for dinner and it was good enough to squash all of my cravings for bread and sugar. Still have a headache from the withdrawals but it is not as bad as when I have tried in the past.

    Sorry for the super late post, I also needed to make sure that we made it through the night without a snack attack.
