Slow-Cooker Short Ribs


Slow-Cooker Short Ribs

Cooking time 8-10 hours

Serves 4-6

INGREDIENTS
* 5lbs Short Ribs
* 1/2lb Nitrate Free Bacon
* 1/2 Bottle Dry Red Wine
* 1 Bouquet of Rosemary
* 4-5 Bay Leaves
* 1 14.5 oz can of Muir Glen no-salt added Tomato Sauce
* 7-10 Organic Carrots
* 2 Onions
* Salt & Pepper
* 10 Cloves of Chopped Garlic
* Twine 8-10 inches
***The twine may be found at any butcher shop/grocery store just find the meat counter and ask for twine to tie up a roast with and they should be more than happy to oblige***

Cooking Instructions

Coarsely chop the carrots and onions and place in the bottom of the crock pot.  Pan fry the bacon and retain the grease.  Sear short ribs about one minute per side, just until they have a good brown on them, salt and pepper them to your liking and place in crock pot (I evenly coat them in sea salt and coarsely ground pepper).  After you have the ribs in the crock pot evenly spread the garlic around, onto ribs.  Next I pour the tomato sauce and 1/2 bottle of wine over ribs.  Lastly take the bouquet of rosemary and place bay leaves inside, tie up with twine and place on top.  Wine should cover the top of the ribs, you can add more tomato sauce or wine to accomplish this depending on the size of your crock pot.  Cover and let cook for 8-10 hours.

    Not sleeping well. Hoping that gets under control soon. Perhaps the detox? I don't know. Worked out this morning. Legs still ache from Mondays wod. Trying to only eat fruit first thing in the morning. Food is all planned out for today and it's all paleo.

  2. It's day 4 and I feel sooo much better today than I did yesterday. Did not get my headache or shakey at all today, woohoo! I haven't been craving any sugar, which is amazing to me, I really thought that sugar would be hard for me. Haven't even had to go to my chocolate sanity item yet... that's unbelievable to me!

    Food is in check,Doing well.I was not going to go to the gym today due to the pain in my legs from monday and tuesdays wod,but i did and the pain has subsided.Unbelievable!!!!!

  4. Feel really good today. Ate well and did the wod at 5:30. Always a rough one but beat my last time by 30 seconds! I'm going back home to my mother's house tomorrow through Sunday so it's going to be really hard for me to stick to it eating well but I am determined!

  6. Did the wod this morning and ate okay all day. Feeling fine. Soreness from Monday is much better, I'm thinking it wasn't that bad because I am doing better with the fish oil again.

  8. Did great with food today but I have had a headache all afternoon that I can't get rid of. Enjoyed the WOD and the camaraderie today, my legs are still sore from those lunges on Monday. Donna

  9. Great showing at 430, 530, and 630 saw some great efforts and some break downs. Don't forget challenge peeps, the food you are eating now is lower in calories. Eat more!! You are also going through a kind of detox so drink a lot of water. I ate some banging paleo food today and am making short ribs tomorrow.....what recipe should I use......

  12. Good Paleo day and fun time at the gym this afternoon. Accidentally PR'd on the push press, which was encouraging, as I'm still insanely sore from Monday! Had cream in my coffee and a little sour cream and cheese on my Chipotle chicken salad at lunch, but didn't top my chili tonight with either because I vowed only two sanity items per day. Water and fish oil....check. Must admit I'm dying for chocolate, though!

  14. Diet on track, WOD i was about a minute an a half slower than my last time. But on the upside i cut open a pineapple today and i am slowly chipping away at it and it is the bomb.

  16. Dan and I stayed on track with the diet. We weren't able to do the WOD, Dan is still suffering Angie's wrath and my lower back is super tight/painful so I have been afraid to do anything with it.

  17. Proud of myself and Casey for sticking with it so far...especially when we have house guests! Hopefully we'll keep our will power going for this weekend in ny. It may require a cheat meal or two.

  18. Mike and I have been eating clean since Sunday and feeling awesome! I'm getting sorta concerned because we are not having any withdrawls, moods swings, wanting to choke anyone or beat up a vending machine...in fact just the opposite. Things seemed less stressful, sleep is great. The only downside is I spend alot of time doing food-prep but it's worth it! Maybe both of our heads will turn all the way around and we will have an exorcist moment next week????
